Peachy feta & spinach salad

 – Serves 2 –

Peach season lasts from July to September. The perfect moment to make this delicious summer salad. The sweetness of the peaches matches perfectly with the saltiness of the feta cheese.

INGREDIENTS

3 ripe peaches
100 g baby spinach
1 small handful goji berries
salt to taste
pepper to taste
For dressing:
4 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon honey
1 teaspoon mustard

WORK DESCRIPTION

  • Wash peaches and spinach, spread spinach on 2 plates
  • Cut peaches (leave skin on) in slices and place on spinach, cut or crumble feta and sprinkle on salad
  • For dressing: mix olive oil, lemon juice, honey and mustard, drizzle on salad, sprinkle goji berries on top, add salt and pepper to taste
