For all raw food lovers. This cake is made of nuts, dates, cacao powder, coconut milk, honey and spices. It’s ‘raw’ because it’s not baked. It only takes a food processor (or blender) to make.
Nuts can be absolute health boosters. Carrying some of the highest antioxidant levels of all plant foods. Nuts are rich in fibre, healthy fats, vitamins and minerals. Almonds and cashews can be very beneficial for good skin and bone health. True beauty food.

INGREDIENTS
For the base:
For the filling:
2 tablespoons
honey (or maple syrup)
A few
goji berries to decorate (or use cacao nibs or coconut flakes)
Required tools: Strong food processor or blender, small round cake tin (diameter about 15 - 20 cm), baking paper
WORK DESCRIPTION
- Soak cashews in water for 2 hours
- Line base of baking tin with baking paper
- For cake base: combine almonds, pitted dates, coconut oil and salt in food processor and blend for 1 minute
- Scoop mixture into cake tin and push down using your hands to form an even cake base
- Place in fridge
- For cake filling: combine drained cashews, coconut milk, cacao powder, honey, vanilla essence and cinnamon in food processor or blender and blend for 2 minutes
- Pour filling into cake tin
- Place back in fridge
- After 30 minutes sprinkle with goji berries and put back in fridge to set for another 2 hours
