It’s asparagus time of year! Next to roasted salmon and covered in a delicious dressing, a truly healthy feast. Salmon is a great source of health supportive omega-3 fats. These can be beneficial for the heart and brain function and asparagus is rich in important vitamins and minerals.
Tip: for the salmon, I prefer oven to pan roasting, as the fish is less likely to fall apart and the kitchen does not end up so smelly.

WORK DESCRIPTION
- Preheat oven to 200 degrees (hot air oven)
- Wash asparagus and lemons, grate peel of 1 lemon and juice both, set aside
- Chop asparagus ends off (about 1-2 cm), place asparagus in pan, cover with water, add pinch of salt and let simmer on medium heat for about 15 minutes until tender
- Meanwhile place salmon pieces on baking sheet in oven dish (easier to clean afterwards as fish can be sticky)
- Drizzle juice of 1 lemon and some olive oil (not 50 ml) on salmon, sprinkle with salt and pepper, bake for 10-15 minutes
- Meanwhile prepare dressing: add 50 ml olive oil, juice of 1 lemon, garlic, parsley and honey to blender. Blend until smooth
- Serve salmon and asparagus with dressing on top and sprinkle with lemon peel
