Typically Dutch Christmas treat with a make-over. Simply made from nuts, dates and spices. No baking required. This festive treat goes well with a warm drink on a cold winter’s day. It is naturally gluten and refined sugar free.
INGREDIENTS
For the base:
250 g
dates (pitted, medjool)
5 tablespoons
water (add more if needed)
For the filling:
Required tools: food processor, loaf tin and baking paper
WORK DESCRIPTION
- Wash lemon, grate, juice and set aside
- For base, add 300 g mixed nuts to food processor and pulse until roughly chopped
- Add dates, pumpkin spice and 5 tablespoons water and mix until well combined (add 1-2 tablespoons water if mixture is too dry)
- Push baking paper into loaf tin, divide dough in 2 equal parts, scoop one part into loaf tin and push down using your hands to form even base
- Carefully lift out baking paper including base, set aside
- Repeat with other half, but this time leave it in loaf tin and set a side
- For filling, add almonds to food processor and pulse until roughly chopped
- Add maple syrup, water, vanilla, salt, lemon juice and zest, mix until well combined. Scoop mixture on top of base into loaf tin, spread out evenly
- Carefully place other base on top of filling into loaf tin (tip: flip over baking paper) and gently push down
- Place in fridge to set, cut in squares before serving
